This one is going to be a little different. I intend to update this periodically. I want to share my favorite recipes and those which I have had the pleasure of learning from friends.
I’ll also sharing a personal anecdote about where the recipe comes from or why I enjoy it.
Ingredients:
* 1 & 1/2 Cup Sweet potatoes
* 1/2 Cup Almond Butter
* 1/2 Cup Maple Syrup
* 1 tbsp Oil
* 1/4 Cup Cocoa
* 1/4 Cup Almond Flour
* 1/4 tsp baking soda
* 1/4 tsp baking powder
* 1 tsp vanilla
* a pinch of salt
* + chocolate chips
Process:
Bake sweet potatoes on a pan in the oven or heat them in the microwave. They are easier to cook with and measure when mashed.
Mix all listed ingredients in a bowl, until smooth
Then bake in a square pan (the most efficient kind) at 450° for 1hr - 1hr 30
Stick a toothpick in the middle, when the middle starts to harden its done
Ingredients:
* Sweet potatoes (4 - 5 whole)
* Cooking Oil
* Tony Chachere's
Process:
Chop the Sweet Potatoes, making the individual fries as skinny and long as possible.
After Chopping, spread the sweet potatoes on a baking pan as evenly as possible
Drizzle cooking oil over the sweet potatoes
Sprinkle Tony Chachere’s over the sweet potatoes.
You can also spread the oil, and Tony’s in by mixing the ingredients up with your hands, it is just messy.
Place pan in oven at 450° for 1 hour.
After 30 mins, remove pan from oven, flip sweet potatoes, and sprinkle more Tony’s on the sweet potatoes, and place back in the oven.
Ingredients:
* 2 lbs red kidney beans (Camellia's)
* 1 large onion
* 4 bay leaves
* 2 tbsp Bacon grease
* 1 cup flour
* Seasonings: Salt, Pepper, Parsley, Garlic Powder, Tony Chachere's, Paprika
* Optional: Ham
* Not optional: Water
Process:
Leave beans in a pot to soak in water overnight.
In the morning drain the water, and replace it with twice as much water as you have beans.
Leave the beans on the stove on a low temp, with the 4 bay leaves in the pot for a few hours. (stir occasionally)
1 - 1.5 hrs before serving add the 1 chopped onion, 2 tbsp bacon grease, and seasonings (2 tbsp each) and potentially ham.
Bring the pot to a boil for 10 minutes (stir constantly otherwise it will burn)
After the pot has finished boiling, return to low heat, and in a separate container mix about 1 cup of flour with water until it has a creamy consistency.
Mix this cup of flour-water into the pot, and the beans are ready to serve.

Once You have gathered all the ingredients, mix the 1/2 cup of bacon drippings in a large saucepan over low-medium heat until it becomes a smooth roux. Stir constantly.
Chop the celery, onion, bell pepper, and mince the garlic then add to the roux, stir for 10-15 mins.
Add the water and beef bouillon cubes to a large soup pot and bring to a boil.
Stir until bouillon cubes are dissolved, then and the roux and vegetables to the boiling water.
Lower the pot to medium heat and add the seasonings: 1 tablespoon white sugar, 1 tsp salt, 1 tsp pepper, 2 tbsp hot pepper sauce, 1 tsp Cajun seasoning. As well as the bay leaves, thyme, can stewed tomatoes, and can tomato sauce.
Simmer soup over low heat for 1 hour. mix in 2 teaspoons of file gumbo powder after an hour.
Chop the pound of okra, or preferably blend it and add stir into the gumbo.
Add 2 tbsp distilled white vinegar and 2 tbsp Worcestershire sauce and stir on medium hear for 30 more minutes.
Bring to a boil and then let cool before serving with white rice.

Chop the 1 large onion, 1 bell pepper, and 2 sticks of celery, and mince the 2 garlic and sauté in a large saucepan on medium heat.
Chop the chicken and Andouille sausage and add to the saucepan.
Add 2 cups uncooked rice, 16 oz chicken stock, whole tomato, as well as 1 tsp salt, 1 tsp pepper, 1 tbsp Tony Chachere’s, and 1 tbsp Paprika to the pan.
Cover and let cook for 25-30 minutes on high-medium heat, stir constantly to prevent burning.
Once the chicken stock has evaporated and the Jambalaya has reached a _ consistency it i ready to eat.
